White Chocolate Cheesecake

4 (8 oz) packages cream cheese, softened

1 c sugar

2 large eggs

1 tbsp vanilla extract

12 oz white chocolate morsels, melted

2 c graham cracker crumbs

3 tbsp sugar

1/4 c butter, melted

  1. Preheat oven to 350*.  
  2. Combine crumbs, butter, 3 tbsp sugar. Press mixture into a lightly greased 9" springform pan.  Bake for 8 minutes.  Cool slightly.
  3. Beat cream cheese at medium speed with an electric mixer until creamy. 
  4. Gradually add 1  c sugar, beating well.  
  5. Add eggs one at a time.  
  6. Stir in vanilla, and add melted white chocolate, beating well.
  7. Spread batter in pan over crust and  bake at 350* for 50 minutes.  
  8. Remove from oven and cool completely on wire rack.
  9. Cover and chill for at least 8 hours.
  10. When ready to serve, run a knife around edge of pan and release sides.
  11. Heat up Weebie Jammin Strawberry Vanilla Jam and serve over cheesecake slice.
