PB & WJ Muffins

(yields 12 muffins)

2 c flour
1 tsp baking powder
3/4 tsp salt
3/4 cup Reese's peanut butter morsels
2/3 cup buttermilk
2/3 cup vegetable oil
2 eggs
3/4 cup sugar
1/2 cup peanut butter
1 rounded tsp (FOR EACH MUFFIN) Weebie Jammin Fresh Strawberry Jam 

halved or chopped salted peanuts  

  1. Preheat oven to 400*.  Line a 12 cup muffin pan with cupcake liners.​
  2. In a bowl, whisk flour, baking powder, and salt.  Then, stir in morsels.
  3. In large bowl, whisk buttermilk, oil, eggs, sugar, and peanut butter.
  4. Add the dry ingredients to the wet mixture.  Fold until just barely blended.  (For tender muffins, do not over mix.  It is fine to have small flecks of flour in batter.)
  5. Divide the batter among the liners (fill about 3/4 full).
  6. Add 1 rounded tsp of Weebie Jammin Fresh Strawberry Jam to each muffin and  gently swirl into muffin with a small knife.
  7. Sprinkle each muffin with peanuts.
  8. Bake 13 to 17 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. ​Cool and serve.
