Anna's Small Batch Biscuits

(yields 6-7 (2") biscuits)


6.75 oz All Purpose flour

1/2 tsp salt

1/2 tbsp baking powder

1.4 oz Crisco

3 tbsp Crisco

6 oz buttermilk


  1. Preheat oven to 465*.  Place iron 9-10" skillet with 3 tbsp Crisco in oven as it preheats.
  2. Combine flour, salt, and baking powder in a 2 qt mixing bowl. 
  3. Cut in Crisco.
  4. Fluff in buttermilk.  Be careful not to over-stir, as consistency will change.
  5. Turn out dough on flour-dusted wax paper and fold in on itself 4 times (as if kneading).
  6. Sprinkle more flour on wax paper under the dough to prevent sticking and gently press dough to 3/4" thickness.
  7. Remove skillet from the oven.
  8. Dip biscuit cutter 2" dough-cutter in flour then cut dough.  Dip top of cut biscuit in melted crisco and place in iron skillet.
  9. Repeat & continue cutting leaving no dough.  The biscuits may not be perfectly round, but you do not want to rework dough.
  10. Place the skillet back in the oven and bake approximately 15-17 minutes or until biscuits are done.
  11. Butter and serve with your favorite Weebie Jammin jam or jelly.
